Soul Food Baked Macaroni And Cheese

Welcome back to part three of our Sunday Soul Food Dinner. Up next we’re going to make southern macaroni and cheese. Now what you want to do is go ahead and get your pasta on and cook according to the directions on your package but you don’t want to overcook it because remember it’s going to continue to cook when we put it in the oven. Next we’re going to deal with these star of our mac and cheese the actual cheese. Now you don’t want to use the pre shredded cheese because that comes with a coating already on it which is going to prevent your mac and cheese from melting together well you want to get the block cheese and shred if yourself. When you’re making macaroni and cheese the southern way it needs to be pretty simple so i’m going to use a sharp and extra sharp and a monterey jack cheese. I’m going to go ahead and get these shredded and we’ll be right back now for a macaroni and cheese you’re going to want to make a cheese sauce so in this pot I am slowly heating some evaporated milk, some half-and-half, and some butter.

Now you want to heat this slowly because you don’t want it to boil your ruin it. After we have this heated we’re going to slowly add in our cheeses that we shred and get that melted. Now in this container I have mixed together two eggs and some sour cream. We’re going to pour this over our macaroni noodles. After we do that we’re then going to take four ounces of cream cheese that has been softened and add that to our cheese sauce now you’ve gotten all your cheeses melted together you then want to add some seasoning to your cheese sauce because you want it to be extra yummy so you’re going to add in some mustard powder, a little garlic powder, onion powder, some seasoning salt, be careful with your salt because your cheese already contains some salt so you don’t want it to be too much, and then we’re going to add a little bit of chipotle powder season to taste and we’re going to top that off with some paprika.

Then we’re going to take our cheese sauce pour it over our noodles, top it with a little bit of extra grated cheese. pop that baby in the oven at 400 degrees for about 30 to 35 minutes until you’re topping is nice and golden. All right guys here we are our final product are yummy, gooey,I southern mac and cheese. I wish we had smell-o-vision because this smells amazing and of course for quality control I’m going to take just a little bit of a sample – seasoned to perfection this is so good.
