Raspberry Chocolate Chip Sherbert

My brother called me the other day.  He NEVER does that.  I was worried something was wrong.  Don’t get me wrong.  We keep in contact.  A couple a times a week, we send text messages.  “You smell.”  “You’re a dork.”  You know, the typical brother/sister banter.  SOME people never grow up.  Anyway, this time he wanted to actually talk to me ON THE PHONE.  Who even does that anymore?  Isn’t that sad?  He wanted to ask me what kind of ice cream maker I had.  He had just ordered this fancy schmancy one online and was pretty excited about it.  See, my brother and I share a great love for ice cream, peanut butter eggs and raspberry jelly logs.  I knew his excitement well. Old-Fashioned Chocolate Egg Cream

Old-Fashioned Chocolate Egg Cream

I’m sure I haven’t mentioned this yet, but I’m from New York.  I was born in Long Island and we moved here when I was 4 years old.  I still remember playing in the snow and exactly what the apartments looked like where we lived.  I don’t have much of a New York accent left at all.  I still say ARange instead of ORange.  Wawk, tawk, mawl, fawl didn’t stick with me though.  Another thing I can remember is that my mom used to like to drink Old-Fashioned Chocolate Egg Creams.  When we moved to Florida, she could never find anyone to make it like they did in New York. A Little More About Me

I know I have my about page that tells a little bit about me and my life, but I thought it would be fun to share a little bit more with you.  I’m 42 years old this year.  I actually like being in my 40′s.  I never thought I would say THAT!  Until recently, I used to straighten my naturally wavy hair EVERY day.  Although I liked it, being natural is much easier and I’m glad I don’t straighten it anymore!  See?  Being 40ish means you can do whatever you want!

Speculoos Cookie Butter Pie

Speculoos Cookie Butter Pie

In a recent post I mentioned that they built a Trader Joe’s close enough for me to drive to.  That’s some exciting stuff right there.  I picked up some Speculoos Cookie Butter.  I decided I should buy the crunchy instead of the smooth, because after all, that’s the way I like my peanut butter.  Can I just tell you I was not disappointed?  If I was going to buy the cookie butter, I NEEDED to buy the Speculoos Cookies to try too.  They are delicious little morsels! Lemon Cream Icebox Cookie Bars

Have you ever been to a cookie exchange?  My mom and I got into hosting them some years back and it was SO much fun!  This recipe for Lemon Cream Icebox Cookie Sandwiches became a favorite of mine when I tried it for our cookie party.  I originally got the recipe from a Better Homes and Gardens Christmas Cookies magazine.  I would look forward to that magazine EVERY year!  I love looking through all of the cookie recipes.  I told my mom the other day that she should host one this year and I would help her.  She has such a beautiful home.  Do you know what she said?  “You’re going to host a cookie party?”  No, mom, you are!  “YOU’RE hosting a cookie party??”  Well, I guess I’M going to host a cookie party this year unless I can convince her otherwise.  :-D [Read more...]

Crockpot Cheesy Ranch Potatoes

Today I’m gonna throw something savory atcha!  We cannot live on sweets alone you know.  In my quest to find easy meals to feed my family whilst baking at all hours of the day and night, I came up with this these Crockpot Cheesy Ranch Potatoes.  I don’t know about you, but I LOVE potatoes.  And add some cheese and bacon bits to them?  Perfection in my book!  You can serve these with just about anything.  We had them with pork chops, but they will go great with chicken and steak as well.  They were so creamy and delicious that I thought I was at a restaurant! Jello Cookies

I was a busy little bee this past weekend.  SO much to get accomplished. You know what?  It’s true.  A woman’s work is NEVER done.  WOW.  I just sounded like a 50′s housewife.  Well, that’s appropriate because I always say that I should have been born in the 50′s.  When I tell you that I would be happy vacuuming in high heels and wearing aprons 24/7, you should believe me.  Anyway, now that I’ve managed to stop drowning in my laundry, I’m going to share these Jello Cookies with you! Chocolate Peanut Butter Thumbprints

Chocolate Peanut Butter Thumbprints

I have ALWAYS loved shortbread.  There’s something about that sweet, crumbly, melt-in-your-mouth texture that I cannot resist.  This week I’m participating in The Leftover’s Club.  I wanted to come up with something delicious for my partner so I made something for her that I would love myself.  Chocolate Peanut Butter Thumbprints, of course!  I make a similar cookie around Christmas time that doesn’t have peanut butter in it.  Like I always say….everything is better with peanut butter.  I hope my partner, Heather, from Sugar Dish Me agrees! Peanut Butter Banana Mini Muffins

Peanut Butter and Banana Mini Muffins

I have a confession to make.  I can eat many mini muffins in under a minute.  I have to say, I think that mini muffins are much more dangerous than your average-sized muffin.  They are so portable and mouth-popping that you can’t resist them!  These Peanut Butter Banana Mini Muffins are tender, soft and provide peanut butter taste in every bite.  I happen to think that peanut butter chips could go with most EVERYTHING!  Okay, maybe that’s an over-the-top statement, but I love them. Double Chocolate Cream Biscuits

This past weekend was filled with baking and cooking and pictures!  I had so much fun planning and preparing for my upcoming blog posts.  I don’t think I stopped for a second until my head hit the pillow at night.  My husband gets annoyed with me sometimes because I hardly ever sit down.  Yesterday morning I wanted to surprise everyone and make something fresh and baked out of the oven for breakfast.  I came up with Double Chocolate Cream Biscuits.  Just so you know, you cannot go wrong with turning ANY recipe into a chocolate one.
