What in the hey is a Speculoos Cookie Butter Pie??  Have you ever tried Speculoos cookies?  Trader Joe’s has them.  They are a simple and delicious cookie. There are also Biscoff cookies, which are very similiar, that you can buy in the grocery store. In the words of Trader Joe’s, “they are European caramelized cookies, thin and crispy with a cinnamon-y, almost gingerbread-y flavor”.  I LOVE them!

Nothing But The Best Chocolate Chip CookiesSo the very generous peeps from Plugra Butter company sent me some coupons for free butter.  I have always wanted to try the “fancy” butter.  I was excited. Really excited!  What in the heck was I going to make with the butter??  The possibilites were endless really!  That’s when I decided on Nothing But The Best Chocolate Chip Cookies.

I was really busy this whole week and didn’t use the butter.  When I went into the fridge yesterday to make sure I still had the butter (why wouldn’t I??), there was a small dot left.  I lost my mind  politely asked my husband if he knew what happened to MY special butter.  Apparently it got used on his popcorn and whatever else my son needed it for. So I’ve made this Lemon-Blueberry Bundt Cake three times already since the issue of Woman’s Day came in April.  It is SO delicious!  I love the way the tastes of lemon and blueberries meld together.  Don’t you?  Originally this recipe was made with mini bundt pans.  I decided to throw it in my large bundt pan and it came out perfectly!  I made some fresh whipped cream to go on the side because you always need whipped cream.  Is that a true fact?  Yup.
