TODAY is National Cheesecake Day!  As you can tell from my excitement, I love cheesecake.  I love the sweet cream cheese taste and the melt-in-your-mouth, creamy texture.  You can do so many things with cheesecake.  The flavor selections are endless.  This week’s dilemma for me?  What flavor am I going to choose??  Since I love raspberries, I decided to go with a raspberry cheesecake with a chocolate graham cracker crust.  My family has been making this cheesecake recipe since I was a little kid when I first had it at my aunt’s house.  It is my go-to recipe for cheesecake and everyone loves it! The other day I was making my weekly dinner list and I came up with the idea to make quesadillas.  I didn’t want to make just any quesadilla.  Whenever I go to Chili’s, I order their Chicken Bacon Ranch Quesadillas.  Their ranch is the reason I do not eat bottled ranch dressing anymore.  I knew I wouldn’t be making my quesadillas exactly the way Chili’s does, so I’m not going to call it a “copycat recipe”.  I just made sure they had chicken, bacon and ranch.  And you know you ALWAYS have to add cheese of course! I’m sure I haven’t mentioned this yet, but I’m from New York.  I was born in Long Island and we moved here when I was 4 years old.  I still remember playing in the snow and exactly what the apartments looked like where we lived.  I don’t have much of a New York accent left at all.  I still say ARange instead of ORange.  Wawk, tawk, mawl, fawl didn’t stick with me though.  Another thing I can remember is that my mom used to like to drink Old-Fashioned Chocolate Egg Creams.  When we moved to Florida, she could never find anyone to make it like they did in New York. A Little More About Me

I know I have my about page that tells a little bit about me and my life, but I thought it would be fun to share a little bit more with you.  I’m 42 years old this year.  I actually like being in my 40′s.  I never thought I would say THAT!  Until recently, I used to straighten my naturally wavy hair EVERY day.  Although I liked it, being natural is much easier and I’m glad I don’t straighten it anymore!  See?  Being 40ish means you can do whatever you want!

Have you ever been to a cookie exchange?  My mom and I got into hosting them some years back and it was SO much fun!  This recipe for Lemon Cream Icebox Cookie Sandwiches became a favorite of mine when I tried it for our cookie party.  I originally got the recipe from a Better Homes and Gardens Christmas Cookies magazine.  I would look forward to that magazine EVERY year!  I love looking through all of the cookie recipes.  I told my mom the other day that she should host one this year and I would help her.  She has such a beautiful home.  Do you know what she said?  “You’re going to host a cookie party?”  No, mom, you are!  “YOU’RE hosting a cookie party??”  Well, I guess I’M going to host a cookie party this year unless I can convince her otherwise.  :-D [Read more...]

Today I’m gonna throw something savory atcha!  We cannot live on sweets alone you know.  In my quest to find easy meals to feed my family whilst baking at all hours of the day and night, I came up with this these Crockpot Cheesy Ranch Potatoes.  I don’t know about you, but I LOVE potatoes.  And add some cheese and bacon bits to them?  Perfection in my book!  You can serve these with just about anything.  We had them with pork chops, but they will go great with chicken and steak as well.  They were so creamy and delicious that I thought I was at a restaurant!
