Ever since I was a little girl, I have LOVED ice cream. I have fond memories of my mom and I sitting on the couch sharing a bowl of ice cream. And I guess it’s not a secret, since I have a baking blog, that I might like cupcakes too! When I heard about the ice cream cupcake contest hosted by The Cupcake Project and Cuisinart, I knew I had to enter. I came up with the idea for Strawberry Cheesecake Ice Cream Cupcakes.

I’ve had a trying week so far. I forgot about my car insurance auto-payment which led to disaster. With all the rain we’ve been having in Florida, ants decided to invade my car. GROSS! They were crawling around like they owned the place. Really?! Then today I got a flat tire. Seriously? So I’ve made this Lemon-Blueberry Bundt Cake three times already since the issue of Woman’s Day came in April. It is SO delicious! I love the way the tastes of lemon and blueberries meld together. Don’t you? Originally this recipe was made with mini bundt pans. I decided to throw it in my large bundt pan and it came out perfectly!
